I had a GIANT butternut squash in my fridge that was starting to get some suspicious-looking spots on it, so I threw it in a slow cooker along with a bunch of other stuff I had on hand and it actually came out really good. I'm writing the recipe down in case I want to try it again.

SO. Chicken squash slow-cooker soup, lazy-ish style:

Ingredients:
1 large butternut squash, peeled and cubed
2 boneless skinless chicken breasts
3 cups chicken broth
4 cloves of garlic, finely chopped
1 medium yellow onion, diced
1 Tbsp fresh ginger, peeled and finely chopped
1/4 cup lemon juice
4 Tbsp butter
2 Tbsp honey
1 can sweet corn, drained
1/4 cup chopped spinach
cumin, ground black pepper, and red pepper flakes to taste

(This is, uh, very rough estimates. I don't actually measure anything when I cook)

Instructions: dump everything but the spinach and corn into a slow-cooker and set it on high for about 5 hours. Once the chicken is cooked through and tender, shred it in the pot (squash should start to break down to form a thick broth), stir in corn and spinach, cook for another hour or so.
